You could probably try to download YouTube to MP4 or MOV on your computer. And then you can easily sync it to your iPad via iTunes. There's a free site which helps you to do the trick: http://www.zamzar.com/url/. You just need to input an URL, choose output video format and then you can get desired video clip via Email. Zamzar works quite well, but in very few situations, the message with link to your video may fail to reach your email address. Did you download the YouTube app? Use the App Store app to download YouTube.

Hey buddy, I have the similar problem like you. I want to download youtube videos from my mac computer, then I GOOGLE search and find out a nice free software, Tenorshare Free YouTube Downloader for Mac, it works for ma! And it also has the Windows vdersion named Free YouTube downloader. 

I think in your case, you can try to download the youtube videos in your pc (windows or mac) and then convert the video formats by using the downloader. Finally to watch videos in your iPad mini.
