Copy all contents of scanned image

Hello,

I receive scanned copies. Now i have to copy the contents of scanned images (.pdf, .jpeg, .tif formats) to
MS-Word or MS.Excel. The cotents can also be hand written.

How can I do the above? Please help!!!!
